Pomegranate Coconut Cooler is a refreshing summer drink made with pomegranate, chia seeds, mint leaves and coconut water.

It is not only refreshing and delicious but also healthy and loaded with antioxidants. Pomegranate Coconut Cooler tastes like vacation in a glass! One sip of this refreshing drink and you will feel like you are lounging beachside in the sun.

This cooler is simple to whip up and will take you to a tropical island immediately! Easy dairy-free cooler recipe with an added texture of chia seeds! Simple, easy, and yet refreshing on a hot humid day. They are now my go-to drink these days as it is so easy to whip up and I can get all my fruit fix in one drink.

Ingredients

2 teaspoons chia seeds
2 cups pomegranate seeds (for puree)
2 tablespoons castor sugar
2 teaspoons mint leaves
Juice of 1 lemon
½ cup coconut water

For Serving
2 tablespoons pomegranate seeds
Few ice cubes
1-2 cup coconut water
Sprig of mint

Directions

Step-1

Soak chia seeds in ½ cup water and cover and leave aside for 2-3 hours. Once soaked, strain the seeds.

Step-2

Blend the pomegranate seeds with castor sugar, mint leaves, lemon juice and 2 tablespoons coconut water.

Strain the puree.

Step-3

To serve, add 2 teaspoons pomegranate seeds, half of soaked chia seeds, few ice cubes, half of the pomegranate puree in a glass and top it with coconut water.

Stir and enjoy!

Tips & Variations

  1. You can add brown sugar, honey, maple syrup or powdered sugar in place of castor sugar.
  2. You can keep the puree in the freezer for about a month.
  3. You can substitute chia seeds with basil seeds.
